Instructions to make Aloo baingan curry:
  1. Cut brinjals and potatoes longitudinally.Dip in water for 5 minutes.
  2. Heat oil in a pan till smoking point,add fenugreek seeds.Let it be blacken.Add onion paste and saute for 1 minute on low flsme.
  3. Add ginger garlic paste and 1/4 cup water,cook for 2 minutes. Add all powdered spices,mix well.cook till oil separates.
  4. Add chopped tomatoes,cook for 2 minutes.Add brinjals and salt, mix.Cover the pan and cook 0n low flame for 3 minutes.Donot add water.Let brinjal be cooked in it's own water.
  5. Now add potatoes,mix and add 1/2cup water.Cover and cook on low flame for 6-7minutes or till vegetables are soft.Garnish with chopped coriander leaves.
  6. Serve with hot boiled rice or hot chapati.
