  11. Prepare 1/4 tablespoon fenugreek seeds for seasoning
  12. Take 1/4 teaspoon cumin seeds for seasoning
  13. Take 4 garlic cloves
  14. Make ready 100 ml cooking oil

Brinjal drumstick curry is so very simple just like any other but this power packed vegetable takes the curry to next level. Seriously, the moment I have I prepared the curry using pigeon pea lentils, tamarind, jaggery, salt and chillies which is topped with Udupi sambar powder. Good side dish for rice or rotis.   1. Put tomato and garlic in a mixer jar and make puree
  2. Take a pan add oil to it and once get heat seasoning it with all the seasoning ingredients then add onion shallots (peeled),brinjal,drumstick,turmeric powder fry it for few minutes
  3. Then add red chilli powder,coriander powder,tomato purée,tamarind juice,salt then stir well,it starts to boil
  4. Once started boiling keep it in a sim manner for 15 minutes,our curry is ready to serve now,transfer it to bowl.
