The ingredients needed to make Mushroom Curry:
  1. Get 200 grams mushroom (cut into small pieces)
  2. Get 1 small potatoes (cut into small pieces)
  3. Make ready 1 small onion (coarsely blended)
  4. Prepare 1 medium size tomato (chopped)
  5. Take 1 green chilli
  6. Take 2 tsp Kashmiri lal mirch powder
  7. Get 1 pinch hing
  8. Take 1/4 th tsp garam masala powder
  9. Prepare 1 tsp coriander-cumin powder
  10. Make ready 1 tsp ginger-garlic paste
  11. Take As required turmeric powder
  12. Get to taste Salt
  13. Prepare 1/4 th tsp sugar
  14. Take 1 tsp Everest Chicken Masala (optional)
  15. Take some Curry leaves
  16. Prepare 1 each Khada garam masalas
  17. Take 1 bay leaf
  18. Get 1 dried red chilli
  19. Make ready 1/4 tsp jeera
  20. Take As required Oil
Instructions to make Mushroom Curry:
  1. Take a pan, add 2 tsp oil and fry the potato peices untill half done. Now add mushroom pieces to it, add some salt and fry them for sometime. Remove it from the kadai and keep them aside.
  2. Now in the same kadai add 3 tsp oil. Heat it then add jeera, all khada garam masalas, let them splutter a bit then add hing, mix everything well.
  3. Now add onion, tomato, green chilli & ginger-garlic paste. Mix them well. Now add all dry masalas like, coriander-cumin powder, turmeric powder, red chilli powder, salt, sugar, garam masala powder, chicken masala and fry them till oil starts leaving the pan.
  4. Now add fried potatoes and mushrooms to it and fry them all for 2 to 3 mins more. Add 2 cups of water, add salt if needed and cover it and cook it for 15 to 20 mins in a low flame. Remove the lid and sprinkle some chopped coriander leaves and serve hot with rice or roti.
