Steps to make Spinach and pumpkin curry:
  1. In a deep pan add spinach leaves along with a small roughly chopped onion.add 1 cup of water and cook for 4-5 mins.strain and keep aside to cool slightly then blend coarsely.(not fine paste).
  2. In a blender jar add garlic cloves, onion and ginger and blend coarsely.
  3. In a pan add heat oil add cumin seeds,red dry chilli,hing.add coarsely ground onion garlic and ginger.stir until light pink.add turmeric powder, coriander powder and red chilli powder.saute for few secs.
  4. Add finely chopped tomatoes,green chilli and salt. cover it and cook for 2 mins until tomatoes gets soft.
  5. Add coarsely blended spinach and saute well.cook for 4 -5 mins.on low flame until oil comes on surface.(add little water according to desired consistency while cooking.)
  6. Meanwhile in a pan stir fry pumpkin until soft.
  7. Add stir fried pumpkin in spinach gravy and cook for 2 mins.add garam masala, cover it and switch off the heat.
  8. Spinach pumpkin curry is ready to serve.serve with roti or chapati.
