It's not a spicy but quite a mild dish. Beetroot as such is a very versatile vegetable and can be eaten raw. This moong dal with beet leaves is very flavorful. I have used only pressure cooker to make this dal.

Instructions to make Moong Dal Beet Root Curry:
  1. Wash beet root properly. Peel the skin and chopped it. Grind coarsely with 2 green chilli, few garlic cloves, 1" ginger. And
  2. Heat oil in cooker. Add 1/2 tsp cumin seeds, 2 whole dry red chilli (broken) and 1 bay leaf. Fry for few minutes. Then add moon dak (wash properly twice and soak for 5 minutes). Fry it for few minutes. Then add grated beetroot. Saute it for few minutes.
  3. Add all the dry ingredients 1/2 tsp turmeric powder, red chilli powder and 1 tsp cumin powder and coriander powder. Fry it for few minutes. Add limited water
  4. Mix….well. Close the lid and wait for three whistle. Once it is done
  5. Transfer to a serving plate. Pour tempering on the curry. Immediately serve hot….Moong Dal Curry with… Hot……..Phulkas

This moong dal with beet leaves is very flavorful. I have used only pressure cooker to make this dal. I have made tadka, added spices, beet leaves, dal, water everything in pressure cooker and let it cook. And at the end, I added some lemon juice. Heat oil in a pan musturd seeds, cumin seeds, green chillies, curry leaves, onions, salt, hing cook it till it is light brown.
