It is a dish made out of chicken usually the bony parts like ribs, wings, thighs and legs marinated in a spice blend of chillies, ginger, garlic, lemon grass, shallots, belachan and candlenuts cooked with coconut milk together with potatoes served with rice and roti. Heat a little more oil in a frying pan and fry the paste until it darkens in colour. Add the remaining ingredients other than the chicken, potatoes and fried shallots and bring to the boil.

Kari ayam (malaysian chicken curry) I came across this curry for the first time in Masterchef Australia. Jules had prepared a delicious Chicken Ayam passed down to her from generations. When i searched there were lot of versions floating around the internet. Most of them had same set of ingredients except one or two.

Steps to make Chicken Curry (Kari Ayam):

  2. Rub chicken with lime or tamarind juice and salt, and let it stand for 15 minutes. Heat oil and saute shallots until golden brown, than add ground spices, whole spices, lemon grass, pandanus leaves, curry leaves and chicken.
  3. Cook for a few minutes, than add coconut milk and pounded coconut. Continue to cook, stirring from time to time until the chicken is cooked and the gravy is thick and oily.
