Almost each and every Sindhi family loves this kadhi recipe. When we talk about Sindhi cuisine, it's an amalgamation. This is the traditional style in which we prepare Sindhi curry. My dad is ADDICTED to this just as he is dedicated to his favourite lentil curry(Toor dal).

Instructions to make Sindhi curry:
  1. Heat oil put 1 cup besan and keep roasting till it is brown colour in between when half roasted add cumin seeds…
  2. Now mix 1/4 cup besan in water and mix with the roasted besan…
  3. Now put atleast 3 glasses of water add tomatoes chopoed curry leaves salt haldi red chilli green chilli and boil..
  4. After 1st boil add french beans and cluster beans
  5. Put the flame on low - When they are half tender add potatoes and let it boil….
  6. When potatoes are cook add tamarind pulp and all last add lady fingers by giving a slit in between.
  7. Let it boil on low flame adjust the curry thickness accordindly
  8. Add sum water in between if it is thick..
  9. After the first boil let it boil on low flame till the raw smell of besan disappears and oil floats on top.
  10. Garnish with coriander and enjoy with white rice..
  11. Note..The more you boil the curry it taste better..

Even my picky eater bro does full justice to this curry. Add fenugreek seeds followed by cumin. Stir in ginger, two chopped green chillies and curry leaves.
