Gatta cooked in scrumptious onion yogurt based gravy oozing with flavors is Rajasthani gatta curry. This recipe has a punch of ginger and garlic, richness of onions, tanginess of yogurt, heat of chilies etc. Rajasthani Gatta Curry can be prepared for weekend lunch or special dinners. For Making Curry: Take a bowl, Mix water, gram flour together without lumps and keep aside (I used water in which Gatta was cooked).

Steps to make Gatta curry:
  1. Mix all the ingredients for making gatta dough. Add 2 tb spoon water and mix and knead a soft dough. If needed add some more water to knead a dough.
  2. Now make balls of dough and roll like a cylinder.
  3. Heat 2 bowls of water and put cylinderical Gattas in water and cook for 5 minutes after first boil. Remove Gattas from the water and keep this water for later use in the curry.
  4. Wash, peel and chop and grate onion garlic and ginger. Heat oil in a karahi and put cumin seeds and when cumin seeds splutter put grated onions and ginger and garlic and stir and cook till golden brown colour.
  5. Add tomato puree and cook till oil leaves the karahi.
  6. Cut big Gattas in smaller pieces.
  7. Add water in which Gattas were boiled and bring it to boil. Now add Gattas and cook on medium flame for 3 minutes. Delicious gatta curry is ready.
  8. Serve hot with chapatti or rice garnished with chopped coriander leaves.

Rajasthani Gatta Curry can be prepared for weekend lunch or special dinners. For Making Curry: Take a bowl, Mix water, gram flour together without lumps and keep aside (I used water in which Gatta was cooked). In another bowl mix yogurt, asafoetida, coriander, chilli, turmeric powders, salt and keep aside. Heat oil in a pan and add all the ingredients under "To Temper" column. Govind Gatta is a vegetarian curry that comes from Rajasthani/ Marwari Cuisine where the usual besan gatta is giving a royal texture by shaping it into stuffed balls and cooked in a rich curry made with mawa and curd.
