  2. Prepare 3 dried pepper,chopped
  3. Prepare 7 fresh hot chili,or less
  4. Prepare 3 shallots,chopped
  5. Prepare 6 clove garlic
  6. Get 1 tsp black pepper
  7. Get 1 tsp turmeric
  8. Make ready 1/2 tsp cioriander roots,sliced
  9. Prepare 1 tsp shrimp paste
  10. Make ready 1 tsp finely chopped each galangal,lemongrass
  11. Get vegetables
  12. Get 2 eggplants,chopped
  13. Take 1 sliced f pumpkin
  14. Take 100 grams mushroons
  15. Get 3 yard l ong bezns,any fresh beans
  16. Prepare 3 sweet pepperd
  17. Take 1 fingeroots,sliced
  18. Prepare 1 white turmeric,sliced
  19. Prepare 2 peppercorns ,cut halves
  20. Get 1 tbsp oil to fry chili paste
  21. Prepare 1/2 liter water
  22. Get 1 1/2 tsp salt
  23. Take 1 bunch each hot basils,kaffir lime leaves

They call this jungle curry because it has no coconut milk, and no coconuts grow in the jungles of northern Thailand. Jungle curry is called Gaeng Pah in Thailand and unlike many curries it does not contain coconut milk. Add water and bring to the boil. Get all the ingredients cut and prepared for this authentic curry and then it's just a matter of mixing together the chilli paste and getting it all in the pan.

Instructions to make Jungle Curry:
  1. This is a kind of Thai curry with no coconut milk,you can add your favorite meat,grill fishes,but this time a make it vegetarian :)
  2. Prepare chilli paste ingredients,cut,chop,and pound with pestle and mortar( red chili paste can do,just add more garlic,shallots,ad some fresh chili )
  3. Prepare fresh vegetables,clean,chop,and separate hard and soft veggies( hard : pumpkin,eggplants,beans ),( soft : mushroom,fresh chili ) as when you cook separate you will get the good color and not over cook some kinds of vegetables
  4. In medium pot,heat vegetables oil on medium,stir chili paste until fragrance,add kaffir lime leaves,peppercorns,white turmeric,finger roots,stir until get good smell of all herbs
  5. Add water,when it boil add pumpkin,eggplants,beans ,cook it about 5 mins
  6. Add mushrooms,fresh chili,sweet peppers,cook it another 2 mins
  7. Add salt ,hot basils,turn heat off,serve hot with steamed jasmine rice :)

Add water and bring to the boil. Get all the ingredients cut and prepared for this authentic curry and then it's just a matter of mixing together the chilli paste and getting it all in the pan. Jungle Curry will be a staple recipe in my household from now on. Jungle Curry is called "Kaeng Pa" which is the direct translation, pa=jungle.
