The ingredients needed to make Thai Green Curry:

- Take 2 tbsp lemongrass (if you don't have lemongrass,use lemon juice)
- Get 2 tbsp galangal chopped
- Take 3 kaffir lime leaves

- Get 3 tbsp thai shallots(or green onion)
- Get 1/2 cup thai sweet basil
- Take 1/2 cup coriander leaves

- Get 1/2 cup vegetable of your choice
- Prepare 1 cup bamboo shoots
- Prepare 2 tsp brown sugar
- Prepare As needed coconut milk
- Take 2 tsp soy sauce
- Get 1/2 cup green beans trimmed
- Take As needed oil
- Get 4 Kaffir lime leaves
- Get 2 cup vegetable stock
- Get To taste salt
- Get as required Cashews to garnish
- Take as required Red chilli for garnish

The curry is green in color, spicy, aromatic, sweet and savory at the same time. Thai green curry is so delicious, specially when served with steaming white jasmine rice. While there is often Thai sweet basil tossed into the curry, the real green color of the curry comes from Thai green chilies that are the main ingredient of the Thai green curry paste used to make the curry. So the greenness comes from green chilies.
Instructions to make Thai Green Curry:
- Place all 'Green Curry Paste' ingredients in a food processor or blender, and add 1/3 glass coconut milk or enough to blend, blend it and make smooth paste.
- Heat a wok or deep frying pan over medium-high heat. Drizzle in oil and add2 tbsp green curry paste. Stir-fry until fragrant (about 2 minutes).Add stock plus lime leaves or bay leaves. When sauce comes to a gentle boil, reduce heat to medium-low or just until you get a nice simmer. Add all vegetables, Simmer 7-10 mins, or until all vegetable soft enough to pierce with a fork.
- Pour soy sauce, and add the whole kaffir lime leaves and sugar, stir well.
- Add tofu and bamboo shoots, stir and cook for 5 minutes. Then stir in green beans and bean shoots, cook for a further 2 minutes. Taste and adjust seasoning to suit your taste.
- Serve with jasmine rice or plain rice.
While there is often Thai sweet basil tossed into the curry, the real green color of the curry comes from Thai green chilies that are the main ingredient of the Thai green curry paste used to make the curry. So the greenness comes from green chilies. The green chilies are bird's eye chilies, but only the green ones are used for this recipe. Return chicken to the skillet, stirring to coat with the curry mixture. The "sweet" in the Thai name (wan means 'sweet') refers to the particular color green itself and not to the taste of the curry.
